  • 1 cup couscous (dry)
  • 1 cup broccoli florets
  • 1 tsp olive oil
  • Fresh parsley (for garnish)

Instructions

  1. Boil 1 cup of water, stir in couscous, cover, and let sit for 5 minutes. Fluff with a fork.
  2. Preheat oven to 200C (400F). Toss broccoli with olive oil, salt, pepper, and garlic powder; spread on a baking sheet and roast for 15-20 minutes until crispy.
  3. Season the salmon fillet with salt, pepper, and olive oil; bake at 180C (350F) for 12-15 minutes or pan-sear until golden brown.
  4. Layer cooked couscous in a meal prep container, add roasted broccoli alongside the salmon fillet. Garnish with parsley and a lemon wedge if desired.
