  • 1 cup salted butter (browned and cooled)
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ cup honey
  • 1 large egg
  • 1 tbsp vanilla extract
  • 1 tsp coarse sea salt
  • 1 tsp baking soda
  • 2½ cups all-purpose flour
  • 1 cup chopped roasted pistachios

Instructions

  1. Brown the butter in a saucepan over medium heat until golden brown. Let cool for 20–30 minutes.
  2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a bowl, mix cooled browned butter, sugars, and honey until creamy. Add egg, vanilla extract, salt, and baking soda; mix well.
  4. Gradually stir in flour until just combined. Fold in pistachios.
  5. Drop dough onto the prepared baking sheet about two inches apart.
  6. Bake for 8–10 minutes until lightly golden around the edges.
  7. Cool on the tray for about 5 minutes before transferring to a wire rack.
