  • 1 cup mushrooms
  • 1 cup carrots
  • 1 bell pepper (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon minced ginger
  • 2 cloves minced garlic
  • 2 cups cooked rice

Instructions

  1. Prepare the ingredients by slicing the chicken, julienning the carrots, and slicing the mushrooms.
  2. Heat a wok or large skillet over medium-high heat and add a splash of sesame oil.
  3. Cook the chicken until browned and cooked through, about 5–7 minutes. Remove from the pan.
  4. In the same wok, add more sesame oil if needed and stir-fry the mushrooms and carrots for about 3–4 minutes.
  5. Return the chicken to the wok and stir in soy sauce, ginger, and garlic. Cook for an additional 2–3 minutes until heated through.
  6. Serve hot over rice.
