  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 yellow onion
  • 3 cloves garlic
  • 1 ½ cups mixed frozen vegetables
  • 4 cups chicken broth
  • 2 cups half-and-half
  • 2 cups shredded cheddar cheese
  • ¾ teaspoon salt
  • ¾ cup sour cream
  • 3 tablespoons salted butter (divided)
  • ¼ cup flour
  • ¾ teaspoon Worcestershire sauce
  • 2 teaspoons Italian seasoning
  • ½ teaspoon mustard powder
  • ¼ teaspoon ground sage
  • Salt/Pepper (to taste)

Instructions

  1. Peel and chop the potatoes into thirds. Boil in salted water until fork-tender, then mash with sour cream.
  2. In a large stock pot over medium-high heat, cook ground beef until browned. Drain excess grease and set aside.
  3. In the same pot, melt butter and sauté diced onions until softened; add minced garlic.
  4. Whisk in flour for one minute to remove raw taste. Gradually stir in chicken broth.
  5. Add Worcestershire sauce, Italian seasoning, mustard powder, and sage. Stir in half-and-half and bring to a boil before simmering.
  6. Mix in mashed potatoes thoroughly and blend for a creamy texture if desired.
  7. Stir in cooked beef and mixed vegetables; heat through for about five minutes.
  8. Remove from heat and fold in shredded cheese until melted.
