  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced (+ extra for garlic naan brushing)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste (Madras or Indian blend)
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 beef stock cube
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • Salt and freshly ground pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Cut beef into cubes and prepare other ingredients.
  2. Brown the beef in a skillet over medium heat with oil; remove when browned.
  3. Sauté onions in the same skillet until translucent; add garlic and ginger.
  4. Combine all ingredients in a slow cooker, including spices and coconut milk.
  5. Cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  6. Prepare garlic naan while curry cooks by mixing flour, water, and salt; brush with garlic oil before cooking on a skillet.
  7. Serve hot garnished with cilantro alongside warm naan.
