  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1 tsp salt, or to taste
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • 2 tbsp tomato paste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in minced garlic and grated ginger; cook until fragrant.
  3. Mix in curry powder, ground cumin, turmeric, chili powder, and salt. Cook for another minute to toast the spices lightly.
  4. Add beef chuck cubes into the pot and stir well to coat them with the spice mixture. Cook for about 5 minutes until browned on all sides.
  5. Pour in coconut milk, beef broth, and tomato paste; stir everything together until combined. Bring to a gentle simmer.
  6. Cover your pot and let it slow-cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
