  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional)
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp oil for browning

Instructions

  1. Prepare your ingredients by dicing the onion and mincing the garlic.
  2. In a large pot or Dutch oven, heat oil over medium-high heat and brown the beef cubes for about 5-7 minutes; set aside once browned.
  3. Sauté the onion until translucent, then add garlic and ginger, cooking until fragrant.
  4. Stir in curry powder, cumin, turmeric, paprika, and chili powder; cook for one minute.
  5. Add canned tomatoes, coconut milk, beef broth, tomato paste, and return the browned beef to the pot; season with salt and pepper.
