  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 2 potatoes, diced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Season the beef chunks with salt and pepper. Heat olive oil in a skillet over medium-high heat and brown the beef on all sides for about 5 minutes. Transfer to the slow cooker.
  2. In the same skillet, sauté onions, garlic, carrots, and bell pepper until softened (about 3-4 minutes). Add to the slow cooker with diced potatoes.
  3. In a bowl, mix together beef broth, tomato paste, paprika, and oregano until smooth. Pour over the meat and vegetables.
  4. Cover and cook on low for 6-8 hours or on high for 4 hours until the beef is tender.
  5. Adjust seasoning as needed before serving hot with your choice of sides.
