  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • 1 cup beef broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp red curry paste
  • 1 tbsp curry powder
  • Salt and pepper to taste
  • Juice of 2 tablespoons lime

  1. Cut the beef chuck into 1.5-inch cubes. Finely chop the onion, mince the garlic, and grate the ginger.
  2. In a large pot over medium heat, add oil and sauté the onion until translucent (about 5 minutes). Add garlic and ginger; cook for an additional minute.
  3. Stir in the red curry paste, curry powder, salt, pepper, and other spices; cook for about 2 minutes.
  4. Transfer this mixture to your slow cooker. Add beef cubes, coconut milk, and beef broth; stir well.
  5. Cook on low for 6-8 hours or high for 3-4 hours until the beef is tender. Stir in lime juice before serving.
