  • 2 pounds potatoes, cut into 1 1/2 – 2 inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a slow cooker, combine potatoes with olive oil, salt, black pepper, and paprika until well coated.
  2. Place chicken breasts on top of the potato mixture and season with remaining salt and pepper.
  3. In a mixing bowl, whisk together the Parmesan garlic sauce and water or chicken stock; pour over the chicken and potatoes.
  4. Cover and cook on High for 4 hours or Low for 6 hours until the chicken is cooked through and potatoes are tender.
  5. In the last 20 minutes of cooking, sprinkle mozzarella cheese on top until melted.
