  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 oz taco seasoning mix
  • 14.5 oz diced tomatoes with green chilies
  • 15 oz black beans (drained and rinsed)
  • 15 oz corn (drained)
  • 1 cup salsa
  • Tortilla strips
  • 1 cup shredded Mexican cheese blend

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain excess fat.
  2. Sauté diced onion with the beef until softened; add minced garlic and cook until fragrant.
  3. Stir in taco seasoning and diced tomatoes, then remove from heat.
  4. Layer ingredients in a slow cooker: start with salsa, add tortilla strips, half the beef mixture, black beans, corn, and repeat layers.
  5. Cook on low for 4-5 hours or high for 2-3 hours.
  6. About 15 minutes before serving, top with shredded cheese and cover until melted.
  7. Serve garnished with cilantro and your choice of toppings.
