Ingredients

Scale
  • 2 lbs beef chuck or stew meat, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 tbsp vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp curry powder (or your favorite curry blend)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp chili flakes (optional)
  • Broth or coconut milk (enough to cover beef)

Instructions

  1. Gather and prepare your ingredients: chop the onion, mince garlic, and grate ginger.
  2. In a heavy-bottomed pot, heat vegetable oil over medium-high heat. Season beef with salt and pepper and sear in batches until browned; set aside.
  3. In the same pot, sauté onions until translucent. Add garlic and ginger, cooking until fragrant.
  4. Stir in spices: curry powder, cumin, coriander, turmeric, and chili flakes if desired.
  5. Return the beef to the pot and pour in enough broth or coconut milk to cover the meat comfortably. Bring to a gentle simmer.
  6. Cover loosely and let simmer on low heat for about 2 hours or until beef is tender. Stir occasionally.
  7. Adjust seasoning if needed before serving hot over rice or your choice of side.
