  • 1 cup granulated sugar

  • 1/3 cup molasses
  • 2 1/4 cup all-purpose flour (300 grams)
  • 2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 12 teaspoons ground ginger
  • granulated sugar for rolling
  • 1 tablespoon melted butter
  • 1 tablespoon pure maple syrup
  • 1 1/2 cups powdered sugar (180 grams)
  • 2 tablespoons milk (and a very tiny bit more if you need more)
  • pinch of salt, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a stand mixer, cream together softened butter and granulated sugar until light and fluffy.
  3. Add egg and molasses, mixing until well combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and ground ginger; gradually add to the wet mixture until a soft dough forms.
  5. Roll small balls of dough in granulated sugar before placing them on a lined baking sheet.
  6. Bake for 9-11 minutes until just set but still soft; allow cooling.
  7. For the glaze, whisk melted butter, maple syrup, powdered sugar, milk, and salt until smooth; dip cookies into glaze once cooled.
