  • 10 oz raspberries (fresh or frozen)
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 9 oz cream cheese (room temperature)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipping cream (chilled)
  • 6 oz white chocolate
  • 1/4 cup whipping cream
  • Pinch of salt
  • Fresh raspberries for garnish
  • Star anise for garnish
  • Fresh rosemary for garnish
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat eggs and sugar until fluffy. Add vanilla extract and vegetable oil.
  3. Fold in dry ingredients gently until just combined, then pour into the baking sheet and bake for about 10 minutes or until golden.
  4. Prepare raspberry filling by cooking raspberries with sugar and lemon juice until saucy; let cool.
  5. Beat cream cheese with powdered sugar and vanilla to create the filling.
  6. Once cooled, spread cream cheese filling over the cake followed by raspberry filling, then carefully roll it up using parchment paper.
  7. For the topping, whip chilled cream until stiff peaks form and fold in melted white chocolate.
  8. Spread whipped topping over the rolled cake and garnish as desired before serving.
