  • 150 g granulated sugar
  • 50 g brown sugar
  • 1 egg
  • 80 g molasses
  • 4 tsp grated orange zest
  • 12 g grated gingerroot
  • 240 g all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 tsp salt
  • 55 g crystallized ginger (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a stand mixer, cream the butter and sugars until light and fluffy. Mix in the egg, molasses, orange zest, and grated ginger until combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and cloves. Gradually add this mixture to the wet ingredients while mixing until just combined.
  4. Chill the dough for at least 30 minutes. Scoop into 1-inch balls, placing a piece of crystallized ginger in each before arranging them on the baking sheets.
  5. Bake for about 12-15 minutes or until edges are firm. Let cool on racks before serving.
