  • 1½ cup potato starch
  • ½ cup warm water
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinese black vinegar
  • 2 tablespoons gochugaru (chili powder)
  • 2 tablespoons minced garlic
  • 3 tablespoons neutral oil (like avocado or sunflower)
  • Fresh cilantro for garnish

Instructions

  1. Boil peeled and cut potatoes in a large pot until fork-tender, about 10-15 minutes. Drain well.
  2. Mash the potatoes in a heatproof bowl, adding salt until smooth.
  3. Mix in potato starch while still hot; knead until dough is cohesive.
  4. Gradually add warm water, mixing until the dough is smooth but pliable.
  5. Shape the dough into half-inch thick noodles and cook them in boiling water for about one minute.
  6. Prepare the chili oil by combining all sauce ingredients except oil and cilantro in a bowl; heat oil until smoky and pour over spices.
  7. Mix cooled noodles with chili oil and chopped cilantro.
