  • Sugar for rolling
  • ¾ cup diced fresh strawberries
  • 1 tablespoon granulated sugar
  • 22 ½ tablespoons fresh strawberry syrup
  • 1 tablespoon fresh lemon juice
  • 1 â…“ cups powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and powdered sugar until fluffy. Add cornstarch, vanilla extract, and kosher salt; mix well. Gradually add flour until fully incorporated, then fold in diced strawberries.
  3. Scoop tablespoon-sized amounts of dough and roll into balls. Roll each ball in sugar before placing them on the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake for 12–15 minutes or until edges are lightly golden.
