  • 160g (1 heaped cup) strawberries, chopped
  • 130g (3/4 cup) white chocolate chips
  • 45g (3 tablespoons) unsalted butter, melted for streusel
  • 63g (½ cup) all-purpose flour for streusel
  • 65g (â…“ cup) granulated sugar for streusel
  • Pinch of salt for streusel

Instructions

  1. Preheat your oven to 425°F (220°C) and line a muffin pan with paper liners.
  2. In a small bowl, mix melted butter, granulated sugar, and flour to create the streusel topping; set aside.
  3. In another bowl, combine flour, baking powder, and salt.
  4. In a large bowl, mix melted butter, sugar, eggs, and vanilla until combined.
  5. Gradually fold in the dry ingredients alternating with buttermilk until just mixed.
  6. Gently fold in chopped strawberries and white chocolate chips.
  7. Fill the muffin tins evenly with batter and top generously with streusel.
  8. Bake for 5 minutes at 425°F (220°C), then reduce temperature to 350°F (180°C) and bake for an additional 15-18 minutes until golden brown.
