  • 4 medium bell peppers (any color)
  • 2 tablespoons extra virgin olive oil
  • 1 large onion (chopped)
  • 3 cloves garlic (grated)
  • 1½ teaspoons ground coriander
  • 1 teaspoon turmeric
  • ¼ teaspoon red pepper flakes
  • 1 cup rice
  • 1 can (15 ounces) lentils (drained)
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 cups vegetable broth
  • ½ cup Italian parsley (chopped)
  • 4 wedges lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion for about three minutes until softened.
  2. Add rice, garlic, ground coriander, turmeric, and red pepper flakes; sauté for another minute.
  3. Pour in vegetable broth, add lentils and diced tomatoes. Season with salt and black pepper; simmer for about 10 minutes until rice is half-cooked.
  4. Preheat oven to 350°F (180°C). Cut bell peppers in half lengthwise and remove seeds.
  5. Fill each pepper half with the rice mixture. Place in a baking dish and cover with foil if desired; bake for about 40 minutes or until tender.
  6. Serve topped with parsley and lemon wedges.
