  • 1.5 pounds flank steak
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup sun-dried tomatoes, chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced

Instructions

  1. Butterfly the flank steak by cutting it horizontally without cutting all the way through. Open it like a book and pound gently to an even thickness.
  2. Season both sides of the steak generously with salt and pepper.
  3. In a mixing bowl, combine spinach, ricotta cheese, mozzarella cheese, sun-dried tomatoes, olive oil, and minced garlic until well mixed.
  4. Spread the filling over one side of the butterflied steak while leaving an inch border.
  5. Roll up the steak tightly from one end to the other and secure it with kitchen twine or toothpicks.
  6. Preheat the oven to 375°F (190°C). Place the stuffed steak in a baking dish and bake for 25-30 minutes until cooked through (internal temperature should reach 145°F /63°C).
  7. Let rest for about 10 minutes before slicing and serving warm.
