  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh thyme, oregano, and sage

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and dry the mini pumpkins, cut off their tops, and scoop out the insides.
  3. In a skillet, heat 3 tablespoons of olive oil over medium heat; sauté the onion and garlic until fragrant.
  4. In a mixing bowl, combine ground beef, pumpkin puree, sautéed onion and garlic, spices, and herbs; mix well.
  5. Grease a casserole dish with olive oil; place mini pumpkins inside and fill them with the beef mixture.
  6. Replace the tops of the pumpkins and roast for 30-35 minutes until tender.
