  • 1/2 cup prunes, finely chopped
  • 1/4 cup dried apricots or dates, finely chopped
  • 1/4 cup dried cranberries, finely chopped
  • 1/2 cup toasted unsalted almonds, chopped
  • 1/4 cup toasted unsalted pecans, chopped
  • 2 tablespoons cherry jam
  • Coarse sugar for coating

Instructions

  1. Preheat your oven to 350°F (175°C) and toast the nuts on a baking sheet for 6–7 minutes until fragrant.
  2. Finely chop all dried fruits and combine them with the toasted nuts in a food processor. Pulse until finely chopped.
  3. Add cherry jam and spices (orange zest, cinnamon, nutmeg, cloves, cardamom, salt) to the mixture and pulse until sticky and well combined.
  4. Use a cookie scoop to portion out the mixture and shape it into ovals. Roll each in coarse sugar to coat.
  5. Refrigerate for at least 30 minutes before serving to set.
