  • 1 medium sweet potato, peeled and diced
  • 1 tsp olive oil
  • Salt, pepper, paprika, garlic powder
  • 1/2 avocado, sliced
  • 1/2 cup cottage cheese
  • 1/2 tsp hot honey or chili honey

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until golden brown.
