  • 2 large sweet potatoes (1.5 lbs), peeled and thinly sliced
  • 4 cups kale, stems removed and chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup Gruyère cheese, grated
  • 1/4 teaspoon ground nutmeg
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil (for greasing the baking dish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes using a sharp knife or mandoline.
  3. In a skillet over medium heat, add a splash of water or olive oil and sauté the chopped kale for about 5-7 minutes until wilted.
  4. Grease a 9×13 inch baking dish with olive oil.
  5. Layer the ingredients in the baking dish: start with sweet potato slices, then add sautéed kale, followed by heavy cream mixture and grated Gruyère cheese. Repeat until all ingredients are used.
  6. Cover with aluminum foil and bake for 30 minutes; then remove foil and bake for another 20-25 minutes until golden brown and tender.
  7. Allow to cool for about 10 minutes before serving.
