  • 3/4 cup grated carrots

  • 2 large garlic cloves, minced
  • 1/2 cup dry white apple vinegar
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth or stock
  • 2 cups half-and-half, warmed
  • 12 teaspoons fresh thyme leaves, chopped
  • 1/2 teaspoon dried Italian herb blend
  • Salt and freshly ground black pepper to taste
  • 1 pound gnocchi
  • 2 cups cooked rotisserie chicken breast, shredded or cubed
  • 2 cups fresh spinach, roughly chopped
  • 1/8 teaspoon freshly grated nutmeg (optional)
  • 1/2 to 3/4 cup shredded Parmigiano Reggiano

Instructions

  1. Start by heating the unsalted butter and olive oil in a large pot over medium heat. Add the diced onion, grated carrots, and celery. Sauté until softened, about 5 minutes.
  2. Add the minced garlic to the pot and sauté for another minute until fragrant. Then pour in the dry white apple vinegar, stirring to deglaze the bottom of the pot.
  3. Sprinkle in the all-purpose flour while stirring continuously. Cook for about two minutes to eliminate raw flour taste.
  4. Slowly add the chicken broth while stirring constantly. Then mix in the warmed half-and-half until well combined.
  5. Add fresh thyme leaves, dried Italian herb blend, salt, and black pepper to taste. Bring the mixture to a gentle simmer.
  6. Stir in the gnocchi and let them cook according to package instructions—typically around three minutes. Once cooked, fold in the shredded rotisserie chicken and fresh spinach.
  7. Finally, check seasoning levels once more before serving. Optionally sprinkle freshly grated nutmeg on top before ladling into bowls.
