  • 1 lb boneless skinless chicken breasts
  • 1/2 cup teriyaki sauce
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste
  • 1 cup fresh pineapple, diced
  • 1 ripe pear, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño pepper, seeded and diced
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • 8 small flour or corn tortillas
  • Optional toppings: shredded cabbage, sliced avocado, chopped cilantro, lime wedges

Instructions

  1. Marinate the chicken by mixing teriyaki sauce, minced garlic, honey, sesame oil, salt, and pepper in a bowl. Add chicken strips and refrigerate for 30 minutes.
  2. Preheat the grill and thread diced pineapple onto skewers. Grill for 2-3 minutes on each side until caramelized.
  3. Grill marinated chicken strips for 3-4 minutes per side until cooked through and slightly charred.
  4. Prepare the salsa by combining grilled pineapple, diced pear, red onion, jalapeño, lime juice, cilantro, salt, and pepper in a bowl.
  5. Warm tortillas on the grill or skillet for about 30 seconds on each side.
  6. Assemble tacos with sliced chicken and pineapple salsa; add optional toppings if desired.
