  • 3 ancho peppers
  • 3 pasilla peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2 tablespoons masa harina

Instructions

  1. Toast the dried peppers in a dry pan for about 1-2 minutes per side until fragrant. Cool, remove stems and seeds.
  2. Soak the toasted peppers in hot water for 20 minutes until soft.
  3. Blend soaked peppers with soaking water and salt in a food processor until smooth.
  4. Season beef cubes with cumin, salt, and pepper; sear in olive oil until browned on all sides.
  5. In the same pot, cook onions and chopped jalapenos until softened; add garlic and cook until fragrant.
  6. Return seared beef to pot with chili paste; stir well.
  7. Add beef stock and masa harina; bring to a boil then reduce heat to simmer for about 2 hours.
  8. Serve hot with your choice of toppings.
