  • 1/4 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce
  • 1 tbsp red curry paste
  • 1 small yellow onion, diced
  • Coconut milk or broth (for the sauce)
  • Salt and pepper to taste
  • 1 tbsp neutral oil (for frying)
  • 1 tbsp neutral oil

Instructions

  1. In a mixing bowl, combine ground chicken, panko breadcrumbs, egg, garlic, ginger, soy sauce, red curry paste, and salt and pepper. Mix until well combined.
  2. Shape the mixture into small meatballs (about 1 inch in diameter) and set aside.
  3. Heat neutral oil in a skillet over medium heat. Cook the meatballs until browned on all sides (about 6-8 minutes), then remove from the skillet.
  4. In the same skillet, sauté diced onion until translucent. Stir in more red curry paste and minced garlic until fragrant.
  5. Return meatballs to the skillet and pour in enough coconut milk or broth to achieve your desired consistency. Simmer for about 10 minutes until cooked through.
