  • 1/4 cup butter (softened)
  • 1/3 cup brown sugar (packed)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon pure vanilla extract
  • 1 large egg
  • 1/3 cup + 1 tablespoon milk
  • 1 (9-inch) store-bought pumpkin pie
  • 12 ounces unsalted butter (softened, 3 sticks)
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 34 tablespoons heavy whipping cream (cold)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake pans by greasing and flouring them.
  2. For the cheesecake layer, beat cream cheese with sugar until smooth. Mix in flour, vanilla, cinnamon, heavy cream, and eggs until combined. Pour into one prepared pan and bake for about 60 minutes.
  3. For the spice cake layer, combine dry ingredients in one bowl. In another bowl, cream butter and brown sugar, then mix in oil, egg, milk, and dry ingredients until just combined. Bake for about 25-30 minutes.
  4. Once cooled, layer the spice cake on a platter, add the cheesecake on top, and finish with the store-bought pumpkin pie.
