  • 500g cooking apples (e.g., Bramleys)
  • 500g eating apples (e.g., Gala, Braeburn)
  • 75g golden syrup
  • 75g soft light brown sugar
  • 50g butter
  • 225g plain flour
  • 150g cold diced butter (for crumble)
  • 75g rolled oats
  • 75g demerara sugar

Instructions

  1. Preheat oven to 180C/350F.
  2. In a saucepan, combine golden syrup, soft light brown sugar, butter, and vanilla extract over medium heat until melted. Stir in cooking and eating apples with sugar and cinnamon. Cook for about 5 minutes until softened.
  3. For the crumble topping, mix flour, oats, salt, and cold diced butter in a bowl until it resembles breadcrumbs. Stir in demerara sugar.
  4. Pour the apple mixture into a pie dish, drizzle with cooled toffee sauce, and top with the crumble mixture.
  5. Bake for 30–40 minutes until golden brown and bubbling.
