  • 8 Granny Smith apples
  • 2 tbsp butter (for filling)
  • ¼ cup butter (for toffee sauce)
  • ½ cup brown sugar
  • 2 cups milk (for custard)
  • 2 ½ cups flour (for crust)
  • ½ cup sugar (for filling)
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • juice of ½ lemon
  • 1 tsp salt (for crust)
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • 4 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • 3 egg yolks
  • â…“ cup sugar (for custard)
  • pinch salt
  • 2 tsp vanilla extract
  • 1 tbsp butter (for custard)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel, core, and slice the apples. Toss with lemon juice, sugar, and spices in a large bowl.
  3. For the crust, mix flour and salt in a bowl, then cut in cold butter until crumbly. Add ice water gradually until the dough forms.
  4. Divide the dough into two disks and chill for 30 minutes.
  5. Roll out one disk and place it in a pie dish. Fill with the apple mixture.
  6. In a saucepan, melt butter and brown sugar; stir in heavy cream until smooth. Thicken with cornstarch mixed with water.
  7. Pour the toffee sauce over the apples and cover with the second rolled-out crust.
  8. Bake on a baking sheet for about 20 minutes until golden brown.
