- 8 Granny Smith apples
- 2 tbsp butter (for filling)
- ¼ cup butter (for toffee sauce)
- ½ cup brown sugar
- 2 cups milk (for custard)
- 2 ½ cups flour (for crust)
- ½ cup sugar (for filling)
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp allspice
- ¼ tsp salt
- juice of ½ lemon

- 1 cup cold butter (diced)
- ½ cup ice water
- 4 tbsp cornstarch
- 1 egg
- 1 tbsp water
- 3 egg yolks
- â…“ cup sugar (for custard)

- 2 tsp vanilla extract
- 1 tbsp butter (for custard)
- Preheat the oven to 425°F (220°C).
- Peel, core, and slice the apples. Toss with lemon juice, sugar, and spices in a large bowl.
- For the crust, mix flour and salt in a bowl, then cut in cold butter until crumbly. Add ice water gradually until the dough forms.
- Divide the dough into two disks and chill for 30 minutes.
- Roll out one disk and place it in a pie dish. Fill with the apple mixture.
- In a saucepan, melt butter and brown sugar; stir in heavy cream until smooth. Thicken with cornstarch mixed with water.
- Pour the toffee sauce over the apples and cover with the second rolled-out crust.
- Bake on a baking sheet for about 20 minutes until golden brown.
