  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 400g canned chopped tomatoes
  • 200ml chicken stock
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 2 cups cooked white rice

  2. Add the chicken pieces, seasoning with salt, pepper, smoked paprika, and oregano. Cook until lightly browned.

  4. Pour in the chopped tomatoes and chicken stock; stir to combine.
  5. Allow the mixture to simmer uncovered for 15-20 minutes to thicken the sauce.
