  • 700 grams green peas (fresh or frozen)
  • 500 grams potatoes (peeled and diced)
  • 34 small zucchinis (cut into thick pieces)
  • 2 medium carrots (sliced)
  • 3 teaspoons tomato paste
  • 2 medium-large ripe tomatoes (diced)
  • 23 tablespoons fresh dill (chopped)
  • Sea salt to taste
  • 400 ml hot water or vegetable stock

Instructions

  1. Heat olive oil in a large pot over moderate heat until shimmering.
  2. Sauté minced onion and garlic until soft and translucent, about 5 minutes.
  3. Add potatoes, zucchini, peas, and carrots; cook for 5 minutes while stirring.
  4. Stir in tomato paste; cook for another minute.
  5. Add diced tomatoes and season with sea salt; cook for 2 more minutes.
  6. Pour in hot water or vegetable stock; bring to a simmer.
  7. Cover and reduce heat; simmer for 40 to 50 minutes until vegetables are tender.
  8. Stir in fresh dill and any remaining olive oil; adjust seasoning if needed.
  9. Let the stew rest for about 15 minutes before serving.
