Turkish Gözleme, a delightful stuffed flatbread filled with spinach and feta, brings the vibrant flavors of Turkey to your table. This savory dish is not only easy to prepare but also incredibly versatile, making it perfect for brunch, lunch, or as a snack anytime. The crispy exterior and soft interior create a satisfying texture that pairs beautifully with fresh salads or yogurt dips.

  • 3 1/3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup lukewarm water
  • 3 tablespoons olive oil (plus more for brushing)
  • 4 packed cups roughly chopped baby spinach leaves
  • 2 tablespoons olive oil
  • 1 medium yellow onion (finely chopped)
  • Salt
  • Freshly ground black pepper
  • 1/2 teaspoon Aleppo pepper (or pul biber, or more to your liking)
  • 1 cup drained and crumbled feta

Instructions

  1. In a large mixing bowl, sift the flour and create a well in the center. Add salt.
  2. Pour in lukewarm water and 3 tablespoons of olive oil into the well. Use clean hands to incorporate flour until you form a rough dough.
  3. Turn out the dough onto a floured surface and knead it for about 2-3 minutes until smooth and semi-firm.
  4. Place it back in a bowl, drizzle with olive oil, cover with a damp towel, and let it rest for 20 minutes.
  5. In another mixing bowl, combine chopped spinach and finely chopped onions. Add olive oil along with salt and black pepper to taste. Stir in Aleppo pepper.
  6. Using clean hands, mix everything together thoroughly and add crumbled feta cheese. Adjust seasoning if needed.
  7. Place dough on a clean floured surface. Divide it into 6 equal pieces and roll each into a ball. Cover with a damp towel.
  8. Taking one ball at a time, roll it on a lightly floured surface into a thin circle about 10 ½ inches in diameter.
  9. On one half of each rolled-out circle, spread about ½ cup of filling evenly while leaving edges clear.
  10. Fold over the empty side onto the filling and gently pat down to remove air. Press edges together firmly.
  11. Heat a non-stick pan over medium-high heat and cook one gözleme for about 1 minute on each side until starting to brown.
  12. Brush cooked ones with olive oil and keep covered with a towel as you finish cooking the rest.
