  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar (filling)
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of each liner.
  3. In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, heavy cream, vanilla bean seeds, and vanilla extract until combined.
  4. Divide the batter among the liners and bake for 20–25 minutes until slightly jiggly in the center. Allow to cool at room temperature before chilling in the refrigerator for at least 2 hours.
  5. Before serving, sprinkle sugar on top of each cupcake and use a kitchen torch to caramelize.
