  • 8 pineapple rings
  • 1 cup dark vanilla extract (alcohol-free)
  • 1 cup coconut vanilla extract (alcohol-free)
  • 1 1/2 cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil for frying
  • 4 oz. cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Soak the pineapple rings in dark and coconut vanilla extracts for at least 1 hour. Drain and pat dry.
  2. Set up three bowls: one with flour, one with whisked eggs and coconut milk, and one with sweetened coconut flakes.
  3. Coat each pineapple ring in flour, then dip in the egg mixture, and finally coat with coconut flakes.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry the coated pineapple rings until golden brown, about 1 minute per side. Drain on paper towels.
  5. For the dipping sauce, mix softened cream cheese and powdered sugar until smooth. Adjust consistency with reserved vanilla extract as needed.
