  • 1/4 ounce active dry yeast (about 2 1/4 teaspoons)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 3 1/2 to 4 cups all-purpose flour
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, mix warm milk, yeast, and a pinch of sugar. Let it sit for 5–10 minutes until foamy.
  2. Whisk in remaining sugar, egg, vanilla extract, salt, and melted butter until combined.
  3. Gradually add flour until a soft dough forms; knead for about 5–7 minutes until smooth.
  4. Place dough in a greased bowl and let it rise covered in a warm place for about 1 to 1.5 hours or until doubled in size.
  5. Roll out dough to about 1/4 inch thick on a floured surface and cut into squares.
  6. Heat vegetable oil in a deep fryer or pot to around 350°F (175°C). Fry beignets in batches for about 1–2 minutes per side until golden brown.
  7. Remove with a slotted spoon, drain on paper towels, and dust generously with powdered sugar before serving.
