  • 1/3 cup soy milk
  • 2 tablespoons olive oil
  • 1/2 large onion
  • 5 cloves garlic
  • 2 medium carrots
  • 2 stalks celery
  • 4 ounces mushrooms
  • 15 ounce can cannellini beans
  • 2.5 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 tablespoon vegan worcestershire sauce
  • 1 teaspoon dried parsley
  • Salt & pepper to taste
  • 12 teaspoons fresh thyme (leaves only)

Instructions

  1. In a mixing bowl, mix flour, baking powder, salt, and pepper. Incorporate the cold vegan butter until crumbly. Stir in soy milk until just combined. Set aside.
  2. Heat olive oil in a large pot; sauté onion until translucent. Add garlic and cook for another minute.
  3. Stir in diced carrots, celery, and mushrooms; cook for about 5 minutes.
  4. Mix in tomato paste and seasoning; then add cannellini beans and vegetable broth. Bring to a gentle boil.
  5. Drop spoonfuls of dumpling dough onto the stew's surface, cover, and steam for 15-20 minutes until fluffy.
  6. Serve hot with fresh thyme leaves.
