  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion, diced
  • 3 large carrots, cut into chunky pieces
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 330 ml vegetable broth
  • 1 medium rutabaga, cut into chunks
  • 4 large potatoes, cut into chunks
  • ¼ head green cabbage, shredded
  • Optional: 9 oz vegan beef or portobello mushrooms

Instructions

  1. In a large Dutch oven or soup pot over high heat, add oil and sear the vegan beef or mushrooms until golden. Remove and set aside.
  2. Reduce heat to medium; add onions, carrots, and celery to the same pot. Cook until softened and add garlic; sauté for about 30 seconds.
  3. Stir in flour and cook for a minute before slowly adding vegetable broth while stirring continuously.
  4. Add rutabaga, potatoes, cabbage, vegetable stock, soy sauce, salt, pepper, sugar, bay leaves, thyme, and rosemary. Mix well.
  5. Bring to a boil then reduce heat to medium-low; simmer uncovered for about 45-50 minutes until potatoes are tender and gravy thickens.
  6. About 10 minutes before serving, return the seared vegan beef/mushrooms to warm through.
