  • 1/2 cup maple syrup
  • 1 cup coconut cream
  • 1/2 cup soaked cashews
  • 1/2 cup lemon juice
  • 2 teaspoons lemon zest
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • pinch of turmeric (optional, for color)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, vegan butter, maple syrup, vanilla extract, and salt to form the crust mixture.
  3. Grease a square baking pan with coconut oil and line it with parchment paper.
  4. Press the crust mixture evenly into the prepared pan and bake for 15-20 minutes until edges are golden brown.
  5. Allow the crust to cool before poking holes with a fork.
  6. Blend together coconut cream, soaked cashews, lemon juice, zest, maple syrup, sugar, cornstarch, salt, and optional turmeric until smooth.
  7. Cook this mixture over medium heat in a saucepan while stirring continuously until thickened (about 4-6 minutes).
  8. Pour the filling over the cooled crust and level it out with a spatula.
  9. Refrigerate for at least 4 hours or overnight until fully set.
  10. Slice into bars and serve chilled.
