  • 2 chicken breasts, thawed and trimmed of fat
  • 1 ounce taco seasoning
  • 1 ounce ranch seasoning mix
  • 15 ounces canned black beans, undrained
  • 15 ounces canned corn, undrained
  • 10 ounces canned Rotel tomatoes with green chiles, undrained
  • 8 ounces cream cheese

Instructions

  1. Place chicken breasts in the bottom of the Crock Pot.
  2. Layer black beans, corn, and Rotel tomatoes on top without draining.
  3. Sprinkle taco and ranch seasoning evenly over the ingredients.
  4. Place cream cheese on top without mixing.
  5. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  6. After cooking, shred the chicken with two forks and stir in cream cheese until well combined.
  7. Serve topped with tortilla strips, shredded cheese, avocado, lime juice, and cilantro as desired.
