  • 4 cups chicken or beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 cups cheddar cheese (shredded)
  • 1 cup milk
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • Fresh parsley for garnish
  • Extra shredded cheddar cheese for garnish

Instructions

  1. In a skillet over medium-high heat, brown the ground beef; drain excess fat.
  2. Add chopped onion and minced garlic to the skillet, cooking until onions are translucent.
  3. Transfer the beef mixture to the crockpot. Add diced potatoes, carrots, celery, broth, thyme, parsley, paprika, salt, and pepper.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours until vegetables are tender.
  5. In the last 20 minutes of cooking, stir in heavy cream, shredded cheese, and milk until melted and creamy.
