  • 1 1/2 cups uncooked sushi rice
  • 2 cups water
  • 2 teaspoons toasted black sesame seeds
  • 2 teaspoons sesame oil
  • 1/4 cup soy sauce
  • 2 tablespoons plant-based mirin substitute (such as fruit juice)
  • 1 teaspoon sugar
  • Nori sheets (for wrapping)

Instructions

  1. Rinse sushi rice under running water until clear. Cook in a rice cooker or pot with water until tender.
  2. Once cooked, mix in toasted sesame seeds and sesame oil; let cool.
  3. Wet hands and shape about 1/2 cup of rice into triangles.
  4. Combine soy sauce, mirin substitute, and sugar in a bowl; set aside.
  5. Heat a skillet over medium heat with a little oil, then grill onigiri until golden brown on all sides, about 2-3 minutes each.
  6. Brush with the soy sauce mixture to caramelize, sprinkle with furikake if desired, wrap with nori, and serve.
