  • 810 medium shrimp, peeled & deveined
  • 1 cup cooked brown rice
  • 1 tsp olive oil
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced pineapple
  • 1 cup diced tomato
  • Juice of lime
  • Salt and black pepper to taste

Instructions

  1. In a skillet over medium heat, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Sear for 2-3 minutes per side until pink and slightly charred.
  2. In a mixing bowl, combine corn, pineapple, tomato, lime juice, cilantro (if using), and salt. Toss well and set aside.
