  • 2 medium zucchini, sliced lengthwise
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1 tsp dried oregano
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 190C (375F) and lightly grease a baking dish.
  2. Layer the zucchini slices at the bottom of the dish and sprinkle with oregano.
  3. Spread half of the ricotta over the zucchini and spoon half of the marinara sauce on top.
  4. Repeat with remaining zucchini, ricotta, and marinara sauce.
  5. Top with shredded mozzarella.
  6. Cover with aluminum foil and bake for 25-30 minutes; then uncover and bake an additional 10-15 minutes until golden brown.
  7. Allow to cool briefly before garnishing with fresh basil and serving warm.
