- 2 medium zucchini, sliced lengthwise
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella
- 1 tsp dried oregano
- 1 cup marinara sauce
- Fresh basil for garnish
- Preheat your oven to 190C (375F) and lightly grease a baking dish.
- Layer the zucchini slices at the bottom of the dish and sprinkle with oregano.
- Spread half of the ricotta over the zucchini and spoon half of the marinara sauce on top.
- Repeat with remaining zucchini, ricotta, and marinara sauce.
- Top with shredded mozzarella.
- Cover with aluminum foil and bake for 25-30 minutes; then uncover and bake an additional 10-15 minutes until golden brown.
- Allow to cool briefly before garnishing with fresh basil and serving warm.
