  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter (melted)
  • 2 medium apples (peeled and thinly sliced)
  • 2 tbsp butter (for cooking apples)
  • 500 g cream cheese (softened)
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs and sugar in a mixing bowl. Stir in melted butter until mixed well, then press into the bottom of a springform pan.
  3. In a skillet over medium heat, melt 2 tablespoons of butter, add sliced apples, brown sugar, and cinnamon; cook until tender (about 5-7 minutes).
  4. In a large bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then add eggs one at a time along with vanilla extract and sour cream until smooth.
  5. Pour half of the cheesecake filling over the crust, layer cooked apples on top, then pour remaining filling over the apples.
  6. Bake for about 60 minutes or until slightly jiggly in the center. Allow cooling at room temperature before refrigerating for at least four hours or overnight.
