  • 1 granny smith apple (cubed)
  • ¼ red onion (finely chopped)
  • 25 g walnuts (chopped)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon mustard powder
  • Pinch salt

Instructions

  1. Soak chopped onions in cold water for 10 minutes to reduce sharpness.
  2. Toast walnuts in a dry frying pan over medium heat for 2-3 minutes until fragrant.
  3. In a small bowl, mix tahini, lemon juice, garlic powder, mustard powder, and salt into a thick paste; gradually add water until desired consistency is reached.
  4. Drain and rinse soaked onions; pat dry and chop if desired.
  5. Prepare celery by removing fibrous strings and chopping finely along with parsley and apple cubes.
  6. In a large bowl, combine celery, apple, onions, parsley, toasted walnuts, and dressing; toss well to coat.
