  • 10 g yeast
  • 250 ml cold water
  • 50 g softened butter
  • 250 g cold butter slab
  • 120 g dark chocolate batons
  • 1 egg (for egg wash)

Instructions

  1. Measure and combine flour, salt, sugar, and yeast in a bowl. Add cold water and softened butter; mix until shaggy dough forms.
  2. Knead the dough for 5-10 minutes until smooth. Wrap and refrigerate for 1 hour.
  3. Prepare the cold butter slab and chill again while the dough rests.
  4. Roll out the dough, encase the butter slab, and fold to create layers. Chill between folds for optimal flakiness.
