Classic French-Style Potato Salad is a refreshing and tangy dish that perfectly embodies the essence of summer.   • 1.5 lbs small potatoes (gold or red-skinned)
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp red apple vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp Grainy Mustard
  • 1 tsp salt
  • ¼ tsp freshly ground black pepper
  • 4 tbsp fresh dill, chopped
  • 1 shallot, diced
  • 56 cornichons, diced
  • 1 tbsp cornichon juice

Instructions

  1. Slice small potatoes in half or quarters and boil them in salted water until tender (about 15 minutes). Drain and rinse.
  2. In a mixing bowl, whisk together olive oil, red apple vinegar, salt, pepper, Dijon mustard, shallots, cornichons, and dill.
  3. Toss the warm potatoes gently in the vinaigrette until well coated.
  4. Adjust seasoning if needed and serve warm or chilled.
