  • 1 oz unsalted butter
  • 250 grams granulated sugar
  • 90 grams Dutch cocoa powder
  • 2 oz vegetable oil
  • 1 oz light corn syrup
  • 1 tablespoon pure vanilla extract
  • 1 large egg yolk and 1 large egg (room temperature)
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 60 grams all-purpose flour
  • 2 oz chopped chocolate (chips or bars)
  • For ganache: 12 oz good quality chocolate
  • 6 oz heavy whipping cream
  • 1 tablespoon butter
  • For decoration: Rainbow candy-coated rainbow chips

Instructions

  1. Preheat your oven to 350°F (180°C). Line a 9×13-inch pan with foil and grease it well.
  2. In a large saucepan, combine water, unsalted butter, granulated sugar, light corn syrup, and Dutch cocoa powder. Heat over medium for about 2-3 minutes until blended. Remove from heat and let cool for 5 minutes.
  3. Stir in vegetable oil, pure vanilla extract, egg yolk, and large egg until well mixed.
  4. Add baking soda, salt, and cornstarch; mix to combine. Gently fold in all-purpose flour and chopped chocolate.
  5. Pour batter into the prepared pan and bake for 14-18 minutes until a toothpick comes out with moist crumbs. Cool completely on a wire rack.
  6. For the ganache, heat heavy whipping cream until steaming but not boiling. Pour over chopped chocolate and let sit for a minute before stirring until smooth. Add butter and mix until melted.
  7. Spread the ganache over cooled brownies and sprinkle with rainbow chips.
